"Out and Back" Bikepacking Overnight BIBE

Hello All, I am planning a trip to big bend next week and am seeking advice for a good out and back overnight trip to do by bike. I'm hoping to take a scenic dirt road/doubletrack route that is a 15-20 miles ride out, camp that night and ride back to my vehicle. It seems like most of the dirt roads should be relatively easy to traverse on a fatty MTB (Specialized Fuse).

Top routes that appeal to me are the Glenn Springs Road, Grapevine Hills Road and the Paint Gap Road.

Option B would be routes I could do on my Cyclecross bike (Surly Straggler w/ 700x41 tires), but seems silly if I have the fatty handy :)

Any suggestions? Who's done similar trips?

Glenn Springs, maybe out to Mariscal Mines was the first thing that came to mind.
