Here is a cool site with interesting charts of visitation/use statistics from a number of national parks with weather data included.  They show the busy and slow times at different parks.  Scroll down to the desert parks to find Big Bend.  It clearly shows the spring break bump and a smaller but noticeable bulge at Thanksgiving and Christmas.  Other than RV use it points to February and early November as slower times in the park when the weather is good.
